Which ChatGPT plan do I need?

Custom connectors are only available on some ChatGPT plans, and OpenAI changes this from time to time. Open ChatGPT settings and look for Apps to see whether you can add one.

Does it work on a development store?

Yes, and it is free there.

Can ChatGPT delete things in my store?

Only if you ask it to. ChatGPT usually asks you to confirm before running a tool that changes or deletes data. Deleted items cannot be restored by ChatMerchant, so duplicate your theme before big edits.

How do I disconnect?

Use Connected apps in your dashboard, or uninstall ChatMerchant in Shopify. Either one signs ChatGPT out straight away.
